On a side note: here’s a quick snap of my lunch this afternoon after I went running. It was my lazy version of Cauliflower Salad. I was out of avocado and ended up adding some dried dill and chopped dates (my fave). My husband and I are in a major “date phase” right now and I’m not complaining! they’re delicious and nutritious, and a great food to grab before or after I go running.

Cut the apples straight across and the seeds will fall right out (and they leave an awesome flower pattern).

Raw Strudel
2 large Apples
2 Bananas (Ripe, leopard print bananas)
5-7 Medjool Dates
1/4-1/2 tsp Cinnamon, ground
1 Tbsp Lemon Juice
Directions:
Filling: Blend 1 apple, 1/2 banana, dates, cinnamon, and lemon juice in a blender (Vitamix) or food processor until mostly smooth (little chunks is good too).
Assembly: Cut 1 apple into thin round slices (seeds will fall out or can be cut out). Slice the 1 1/2 banana diagonally into thin slices (about 2″-3″ long).
Layer your food in the following order:
Bottom- Apple slice
Middle- Banana slices (3-5 slices)
Top- filling (about 3 Tbsp)
Keep going until you’ve used up your ingredients.
I top mine with an apple slice and sprinkle on some cinnamon.
