I’ve never been much of a fan of raw cauliflower until I made this recipe. This salad is light and refreshing, and is delicious on its own. You can add more veggies into the mix (celery, tomatoes, jikama, cucumber) if you have them on hand. I was inspired by FullyRawKristina’s Holiday Salad, and thought I’d try my own cauliflower salad using the veggies that I had on hand.
Cauliflower is a great cruciferous vegetable to add to your diet. While it is low in fat and has no cholesterol, it is packed with nutrients that are beneficial for our health, including:
- Antioxidants- Vitamin C (45% of daily recommended amount in 1/2 c serving) and Magnesium
- Anti-inflammatory Nutrients- Vitamin K, Omega-3
- B1, B2, B3, B5, B6, B9 (Folic Acid)
- Potassium
- Cancer-fighting Properties (isothiocyanates and glucosinolates)
Cauliflower Salad
1 whole head Cauliflower, finely chopped
1 Red Bell Pepper, chopped
1/2 c chopped Onion
1c Corn
1/4 c fresh Basil, chopped
Creamy Avocado-Lemon Dressing
1/2 Large Avocado
Juice of whole lemon (1/4 c)
1/2 c Water
1/2 tsp garlic powder
1/4 c Basil (about 8 leaves)
Directions:
In a large bowl, combine salad ingredients.
In a blender, add dressing ingredients and blend until smooth.
Pour dressing over salad and mix well.
