Maple Walnut Granola
6 cups Oats
1 cup coconut, shredded
1 cup Walnuts,
1 tsp cinnamon
1/2 tsp Salt
1/4 c Vegetable Oil (I use sunflower oil. I do not recommend using olive oil due to its heavy flavor)
2 Tbsp Almond butter
2/3 c Maple syrup mixed with 1 tsp vanilla
2 Tbsp water
Directions:
Preheat oven to 300º F.
In a large bowl, mix all of the dry ingredients.
Next, combine oil and mix well. Add almond butter and maple syrup with vanilla.
Pour mixture into two long baking sheets and bake in the oven for 15 minutes. After 15 minutes, remove the pan, stir mixture, and put it back in oven for 15 minutes.
Repeat this until your cereal is a toasty golden brown and smells delicious. I usually end up doing 3 to 4 fifteen-minute cycles.
