This is a delicious and simple meal. For this recipe I used a package of organic broccoli slaw from Trader Joe’s (with carrots), and combined it with my homemade Thai Peanut dressing. This dressing pairs perfectly with the broccoli! Mmm. I also use it with my cabbage salad and as a dipping sauce for spring rolls.
Thai Peanut Dressing:
Makes 1 cup
3 Tbsp Peanut Butter (or 4 Tbsp Peanuts)
1/4 c Water
2 Tbsp Sesame Oil
3 Tbsp Rice Vinegar
1 Tbsp + 1 tsp soy sauce
1 Tbsp Sesame Seeds
-Mix dressing ingredients in a blender until smooth and creamy.
