This recipe was entirely of my husband’s making. He tends to air on the simpler side of things, and he is not one to measure when he cooks. So, inevitably, he usually comes out on one side of the taste spectrum or the other. This combination was on the delicious/tasty end- I never would have guessed!
Tonight he whipped out some cherry tomatoes, pre-made cashew-pecan cheese, cilantro, and wheat tortillas. We’ve been using cilantro a lot lately- it’s sweet and refreshing in smoothies and great in about any salad. It has taken a while for me to enjoy cilantro smoothies, since I immediately associated cilantro with salsa, but once you get past that association, you can enjoy the cilantro for its sweet, energizing flavor.
