Megan Elizabeth is one of my favorite raw food bloggers and chefs. Along with her website, she runs a great youtube channel, called EasyToBeRaw. She recently posted a new recipe for pizza bites (Raw Vegan Pizza Bites BAM!), which looked really tasty. I was so intrigued that I had to make them immediately, and I’m glad I did.
I ended up making pizza bites, pizza logs, and raw spaghetti with the ingredients. Even though I’ve never been a big fan of spaghetti, my favorite of the three was the raw spaghetti!
I used my spiralizer to make some raw noodles from zucchini, and poured the sauce and cheese over them. For white noodles, peel the zucchini before spiralizing.
If you do not have a spiral slicer, you can use a potato peeler. The noodles with be shorter and thicker.
Pizza bites:
The sauce is so delicious and sweet; it really makes the pizza bites taste like the real thing!
Recommendation: I discovered that I liked the overall taste when I cut thinner slices of zucchini.
Pizza logs:
Raw Pizza/Spaghetti
2 Zucchinis
Cheese topping (like parmesan):
2 TBSP c cashews
2 TBSP hemp seeds (I used sesame seeds)
Tomato sauce:
1 c sun-dried tomato
1 TBSP Rosemary
1 TBSP Thyme
3-4 large Basil leaves
1/3 c strawberries, sliced (abut 3 strawberries)
2/3 c tomatoes, sliced
1 TBSP Lemon juice (Megan Elizabeth uses 2 TBSP)
*You can also add some water to make the tomato sauce into a soup!
