The BEST cheese e-v-e-r!
I enjoyed this cheese by itself (it’s that good) and as a dip with some fresh tomato, celery, and dates.
My brother came to visit last month and we were talking about raw to-go lunches. I started eating raw during my break this summer, so it’s been very easy to make raw meals that require some prep.
But how easy is to be raw when you’re on the go? It’s extremely easy! You just grab a bundle of bananas and head out the door! On a few occasions I‘ve been hungry while out. Instead of fast food, I run by the grocery store and buy some cold peaches. Mmm!
For a more “gourmet” raw meal on the go, this cheese is fantastic. This week it has been part of my new favorite snack/lunch- a spoonful of this cheese alongside several stocks of fresh celery and about 10 juicy medjool dates. The combination of this cheese and dates is so scrumptious, I even considered processing some dates into the cheese… I’ll have to try that out and post about it later.
The celery is a perfect neutralizer between bites of the sweet dates and tangy cheese. You can also enjoy this with other fruits (I bet it would be great on some apples) and veggies, crackers, or you can spread it out onto a pizza or casserole.
2 Tbsp of tahini (I just use raw sesame seeds)
4 Tbsp lemon juice
1 tsp sea salt
1 tsp+ cracked black pepper
