Fresh Tacos, anyone?
These are the most refreshing tacos I’ve ever had.
My sister got me hooked on simply using a romaine lettuce leaf as a taco shell when we were vacationing in Palm Springs. We were exchanging raw food recipes and this is one of those things to which I thought, “gee, how did I not think of that?” It’s deliciously light, crisp, flavorful, and functional. It gets the job done very well!
Two things I appreciate about these tacos are 1: How simple they are- no processed dressings, sour cream, etc- yet completely satisfying, and 2: How many variations you can come up with- try with mango chutney, onions, fresh herbs, date paste, sliced peaches, or strawberries.
Here’s what I used for these:
Some sort of spread- I used my rosemary nut pate, but you can use the tomato-basil nut pate (coming soon!), herb cheese spread, mango chutney, or hummus.
Organic cherry tomatoes
Avocado (optional)
Garnish with some fresh basil (not pictures)
Eat as many as you desire, and let me know what variations you come up with!
