Mmm! I’m already craving these and I just made them this week!
Chocolate chip cookies hold a special place in many of our hearts. They do in mine, no just because my mom always made them, but mostly because they were what lured me to the Choose Veg table at a festival. What I was about to learn from that table changed my life for the better!
In the months prior to encountering this life-changing cookie, I had become increasingly more familiar with the term “animal cruelty” and its application to the meat I was eating. I was “interested” but I hadn’t taken even a few minutes to inform myself about it. Ignorance is bliss, right?
One day my friend and I decided to go to a festival at The Camp. It was there, at the camp, after enjoying a delicious vegan chocolate chip cookie at the Choose Veg table that I received some information on animals. I went home, read, watched, listened, and decided to never eat meat again.
So, now you understand why chocolate chip cookies are so special to me. It’s the change they initiated, and my ignorance that they conquered! Why are chocolate chip cookies special to you?

Chocolate Chip Cookies
2 c Flour (ww or white)
*2 tsp baking powder OR 1 tsp baking soda (see note above)
1/2 tsp Cinnamon

1 c Sugar (organic=vegan)
1/4 c + 2 Tbsp Coconut Oil (can use other oil)
2 tsp Vanilla
1/4 c Water
1/2 c Walnuts
1/4 c mashed Banana.
1 c Chocolate chips or chunks (vegan)
Directions:
Preheat oven to 350º F.
In large bowl, mix first 5 ingredients.
In a second bowl mix sugar with oil.
Next, add vanilla and water. Mix in walnuts and stir well.
Mix dry mixture into wet mixture and add chocolate chips.
Place cookies on ungreased cookie sheet in 1” balls, slightly flattened.
Bake for 10-13 minutes. Cookies will look slightly undercooked on the outside, but they are perfectly soft and delicious when you bite into them!
