Vegan, Raw, Gluten-free
Now, this one is a recipe from my husband. Yep, my husband! Although I’m not a fan of the whole gender role stereotyping (husband working, wife in the kitchen), I must say that I probably do more of the cooking and, especially, baking at home. My husband can whip up a killer wrap, amazing salad, and his cooked specialty is a veggie pasta. Other than that, I’m usually the one making meals.
So, it came as a very pleasant surprise when my husband made this out-of-this-world-amazing raw, vegan, gluten-free fruit pie. He followed Steve Pavlina’s raw fruit pie recipe with a few minor adjustments. This pie only has 5 different ingredients.
The crust was the best pie crust I’ve ever had- and that says a lot, considering the fact that my sister is a pie master and she’s made some killer pie crusts. It’s thick, moist, and very flavorful. It compliments the fruit filling just perfectly.
The pie filling is sweet and rich with only 3 simple ingredients (and no sugar!!). The dates are naturally sweet and thicken the filling for a rich texture. My favorite part about this pie is the fact that I don’t feel guitly after eating a piece… or 2 😉
The Crust 3 ingredients:
2 cups raw nuts- pecans, almonds, walnuts, macadamia nuts, etc.
(He used 2 types of nuts: 1 cup raw pecans and 1 cup raw almonds)
1 cup dates, pitted
1/4 tsp sea salt
In a blender or food processor, grind the crust ingredients until you have a fine mixture. Press the mixture into a pie tin and freeze for at least 10 minutes.
Fruit Filling 3 ingredients:
6 cups fresh fruit- blueberries, strawberries, cherries, peaches, apples, etc.
(We’ve used frozen blueberries and the pie was still great. Fresh fruit has more flavor though.)
2 Tbsp fresh lemon juice
1 cup dates, soaked in water for about 10 minutes
Directions:
In your blender or food processor, blend 2 cups of the fruit and with the soaked dates and lemon juice.
In a large bowl, gently mix the blended fruit with the remaining 4 cups of fruit. Pour the fruit filling over the pie crust and refrigerate until serving.
