yogurt + creamy pumpkin spice + pumpkin granola = layers of goodness!
I know this is a late post for a pumpkin recipe, but pumpkin themed recipes continue well into the Christmas season at my place. I seldom grow tired of the sweet, robust flavor of pumpkin, and it seems there are always recipes that could use a bit of pumpkin flare! Needless to say, we’ll be enjoying this pumpkin granola (and parfait) for a while!
For the yogurt, I either use coconut yogurt (made from coconut milk- yum!), soy yogurt, or I make my own natural version from bananas. For the banana yogurt (pictured) I simply blend 3 ripe bananas without liquid and add some vanilla. I’ve found that using cold bananas works best. It usually comes out a bit thinner than typical yogurt, but I enjoy the flavor and texture.
This granola is so good. Add raisins, coconut, or any other flavor boosters of your liking.
I enjoy it as cereal…
Or as a simple snack…
Pumpkin Granola
6 c. Rolled Oats
1 c. Pecans or Walnuts
1.5 tsp Cinnamon
1.5 tsp Pumpkin Spice (mix of clove, cinnamon, allspice, nutmeg, and ginger)
1/2 tsp Salt

1/4 c. Coconut Oil, liquid state (or other oil)
1/4 c. Maple Syrup
1/4 c. Coconut Sugar (maple syrup, molasses or brown sugar are great substitutes)
1/4 c. + 1 Tbsp Pumpkin Puree
1 tsp Vanilla Extract
Optional: add 1 c. raisins after granola is finished baking.
Directions
Preheat oven to 275º F.
Mix dry and wet ingredients separately. Combine mixtures and stir well.
Spread granola mixture onto two casserole pans or baking sheets.
Bake until golden brown (45-60 minutes) stirring every 15 minutes.
Pumpkin parfait
1/2 cup Pumpkin, purée
1/4 tsp Cinnamon
1/8 tsp Nutmeg
1/4 tsp Vanilla extract
1 1/2 tsp Almond milk (coconut, soy, or other milk work well)
2 tsp Maple syrup
6 ounces yogurt (homemade banana pudding, coconut yogurt, or soygurt)
Directions
Combine pumpkin and spices in a small bowl.
Layer yogurt and pumpkin mix in a bowl. Top with granola.
Enjoy!
