This shake is rich and creamy to the max! A decadent dessert shake. I am in bliss.
Mint chocolate chip ice cream has always been my favorite ice cream flavor of all time. My Dad loved it, and he always made sure that we had an ample supply of mint ‘n’ chip in the freezer. Needless to say, all of my siblings love this ice cream.
I haven’t had mint ‘n’ chip ice cream for a couple of years now, and I wasn’t sure if I’d be able to make it using natural, plant-based ingredients. Well, here you have it- a delicious, natural mint chocolate chip ice cream shake! If you have the will power, you can pour the shake into a container and freeze it until it’s solid ice cream. If you want to make ice cream, I would omit the ice so that it has a soft, creamy texture when it freezes (no icy pieces).
I was initially skeptical about using bananas in this recipe. I have a pretty eclectic pallet, but mint and banana just wasn’t gelling in my mind. I didn’t want to solely use cashews (or tofu option), so I decided to go out on a limb and experiment with adding bananas. I cannot detect any hint of banana nor can my husband. The minty sweetness is all we get. Mmm!
Mint Chocolate Chip Shake Makes ~5 cups
3 Ripe Bananas (use frozen bananas for a thicker, creamier texture)
1 c. raw Cashews or 12oz. Tofu
1/2 c. Nut Milk (almond, coconut, hemp, rice, or soy milk work great) ~can omit for a thicker shake
1 c. Spinach leaves, packed (optional for color- can use more or less)
1/4 c. Pure Maple Syrup
8-10 drops Peppermint Essential Oil
1/4 tsp Salt (optional)
1 tsp Vanilla extract
2 c. Ice cubes

1/4 c. Vegan Chocolate Chips (store bought or make some raw chocolate sauce and pour it into a container to freeze until hard).
Directions:
Place all ingredients (except for chocolate chips) in a high-speed blender (I use my Vitamix) or food processor. Blend on high until smooth. Add chocolate chips and blend at a speed determined by desired size of chocolate chips (lower speed for chunks).
*Be sure to stir your smoothie once it has blended so that your peppermint is well-incorporated.
