This salad is so satisfying. Creamy Dijon Dressing mixed with a variety of greens, potatoes, onion, and sweet strawberries. You can add whatever you’d like to this salad and I can bet it will still taste delicious. I mean, c’mon… strawberries with dijon dressing and potatoes? Who woulda thought? 🙂
If you haven’t tried arugula yet, you are in for a surprise. This lettuce has a very robust, slightly bitter flavor that pairs delightfully with strawberries or other sweet mixings. Since the flavor of arugula is quite strong, I enjoy combining it with other greens like romaine and spinach. The dijon dressing is a great dressing for this mix of greens as it is sweet and creamy. I love that there is no added salt or oil in this dressing. I’ve found that most salad dressings can taste great and offer a satisfying texture even with the oil omitted.
I think this dressing would be great over asparagus, potatoes, or other salad fixings (cranberries, raisins, walnuts, pecans, carrots, apple, etc). Hope you enjoy it as much as we do! =)

Serves approximately 4-6 (or 2 very large personal salads if you’re like us).
Creamy Dijon Dressing ~Makes 1/2 c. dressing
1/4 c. Mustard (plain or dijon mustard)
3 Tbsp Vegan Mayonnaise (Veganaise)
1-2 Tbsp Vinegar (I use Apple Cider Vinegar)
2 Tbsp Maple Syrup (or 1 Medjool date)
2 Tbsp Water
Whisk ingredients together until smooth
*If using a date for sweetener, blend ingredients in blender.
1 head of Romaine Lettuce
2-3 c. packed Arugula
4 oz Baby Spinach
1 c. Chopped Strawberries
1 c. Sweet Onion, thinly sliced (any onion will do)
2 lbs. Golden Potatoes, cubed and baked
-Thyme for garnishing
Directions:
Potatoes: Preheat oven to 350º F. Rinse and cut potatoes into bite-size cubes and place into large bowl. Drizzle potatoes with 2 Tbsp oil and spread onto a cookie sheet or baking dish. Sprinkle thyme or rosemary over potatoes and bake for 35 minutes or until soft and golden on bottom.
Toss potatoes with salad ingredients together in a large bowl.
Serve and enjoy!
